How about these ideas? Please feel free to add your own.

TREKWATCH

Set during the same time period as TNG, DSN and VOY. It would see the crew of a new starship acting as lifeguards on a planet filled almost entirely with water, a planet where the inhabitants swim constantly. It could star David Hasselhoff as the ship's Captain and each week, the crew would beam down to the water to save someone from drowning.

QUANTUM TREK

A spin-off of ENT. Scott Bakula would play a Starship Captain sent on missions into the past to change history. Each week, he'd leap into the bodies of people like Neil Armstrong and Yuri Gagarin to change history for the better and ensure a bright future for all.

THE S-TEAM

Set during the TNG, DSN and VOY era. A Starship Captain would be court-martialled for a crime he didn't commit. His crew would be court-martialled too. However, the Captain would steal the ship and flee Earth, pursued by Starfleet.
Each week, the crew would come to a different planet and help the inhabitants overthrow various bad guys. There would be battles in space galore but astonishingly, no-one would ever get killed.
At the end of each episode, the Captain would say, "I love it when a plan comes together!"

KNIGHT RAIDER

William Shatner stars in this all-new Trek spin-off. Captain Michael Flight (Shatner) flies through space in his starship called the USS Kitty solving problems he encounters on his 7 year trek through space. The USS Kitty is the latest and super cool sentient starship. It can fly at Turbo-boost warp and jump over other starships.

The ST-Files

Kate Mulgrew and Patrick Stewart star in this latest incarnation of Star Trek. Special agents Captain Fox Sculder (Stewart) and Captain Dana Muldy (Mulgrew) play Section 31 agents that try to solve paranormal mysteries. In the pilot episode, Dana Muldy gets abducted by unknown aliens. Only Fox Sculder knows what really happend...

When I saw the topic title I thought this was a serious topic. But that was a mistake.

I'm all about any star trek show of any kind that I get to guest star in ! As long as it's star trek, i'm pretty indifferent to what it's about. Star Trek is Star Trek.

GRANNY TREK
This incarnation of Trek is about the TOS crew on a Sovereign class (in the TNG/DS9/VOY era, of course). Every week, they'd beam down to a planet or whatever to do some good deeds, and Kirk would go to the local pub. After that they'd kick some Borg ass and take their medicines, which they first had to get out of the Delta Quadrant. On their way they'd also wipe the Dominion outta the galaxy, and hunt some Hirogen. And other things like that...

Okay, that was pretty messy rofl
