well that prototype ship that the romulans stole in one of the voyager episodes could seperate into 3. =)

The Galaxy Class starship was equipped with the seperation feature for a few reasons. It was a long-term exploration vessel, so in case of an emergency, dump the saucer, and take the stardrive into action. And it was an idea at starfleet command, having one ship target from multiple angles. But, it really didn't work out that well.
