Okay, maybe this question has been asked already, but here goes.
In the very first episode, which I have only seen once and that was about six years ago, the ship that sisko is on and has to evacuate, the opne where his wife gets stuck and blown up, What was the name of it, and what class was it?

No, although there was a Nebula-class ship in that battle. Personally, I think it was the Faragut, but there's no evidence.

I read somewhere that a ship was seen as a Nebula class in Best of Both worlds, but they decided to change it for Emissary. Why they decided to is beyond me

In Star Trek IV "the voyage home" the alien probe disabled a Miranda Class ship which was called the "Saratoga". Is this the same one as sisko was on? Was the one he was on the upgraded and refit version?

I thought the ship type was an intrepid class like voyager it was definately that shape
