Hmmm...let's see. TNG changed their uniforms four or five times before settling with the last one (seasons 5 through 7). DS9 introduced the more relaxed looking pajama style uniforms (which Generations also featured...don't ask me why). Voyager followed in their footsteps with the same uniform. First Contact introduced the new black uniform with grey shoulders and colored tunic (finally a stylish uniform) and DS9 followed suit in their new season (I think it was season 6).

DS9 switched over in the middle of season 5. I'm not sure of the exact episode, but "In Pergatory's Shadow" has the crew wearing the black-grey ones, but at the Jem'Hadar prison they discover Bashir, still in the old uniform. So it was a few episodes before that.

I must say I much prefered the Voyager ones. The early Next Generation ones weren't too good and The Original Series? Well I just didn't like them at all. The grey and black ones were okay but not as good as Voyager's. But who knows? If Voyager had of been in the Alpha Quadrant, they probably would have had a uniform change!

The Original series changed their uniforms for the third episode "The Corbamite Manuever". The uniforms from Star Trek: The Motion Picture were changed for Star Trek II-VI to the all -red incarnations.
On TNG, the neckless uniforms gave way to the contemproary collared two piece at the start of season three.
DS9 started using the new Voyager uniforms while other starfleet personel still wore the TNG incarnation.
DS9 went to the new, dark uniforms first seen in First Contact in the episode "Rapture" during the fifth season.
Voyager used the same uniform for all 7 years.

I got a pretty decent looking TOS uniform on Ebay. It's made by Rubies.
