I agree. Aside from the initial "Holy hell, it's just me and her in here" you'd just be like... "hey Seven, guess what the human ritual is for getting stuck in a lift?" No. That would be taking advantage.... But I'd go about it some other way.
If that was against the rules, I'd rather be with Neelix. Even though TOm and B'Elanna are my favorite characters, I think it'd just be awkward with them. What would you talk about? Nothing. Neelix would be a good conversationalist.

Neelix would be conversational, but it'd get boring after a few hours. Janeway for intellectual discussions, or Seven for yeah.. obvious reasons

And if that wasn't available, I'd say Icheb...someone about my age to talk to.

Icheb, Tuvok, or Janeway, as they would be most likely to maintain calm and figure a way to get out of the turbolift. Seven would also be able to get out, but her conversation would be less interesting during the interim.

Definately Janeway since she is an interesting character and is the captain of Voyager. A conversation with her in person would be interesting lol.

B'Elanna, shes my favorite character on voyager and one heck of an engineer. I could go anywhere in the galaxy in a ship and have no worries with her around. 
As for talking, that wouldnt be a problem since we both have a similiar personality, i would be laughing all the time with the doctor and paris jokes she always talks about.

I would say kes, she has a wonderful personality, and i would never have to worry medical wise.
Talking and getting to know her wouldnt be a problem either.We would enjoy each others company for sure.

Janeway I feel would be a lot of fun to talk to. I wouldn't mind Tom so i could flirt w/ him the entire time.
Other than that I feel a good person to pass the time with would also be B'Elanna.
