For the definition part :

Short for Electroplasma System. Plasma is routed through EPS conduits throughout the ship to supply power to the different parts of the ship. The plasma routed through the EPS is generated by either Fusion Reactors or the warp core

For the "Why is it so nice to say?":

Well, I am not sure but it does roll off the tongue doesn't it?
