Where can I find some decent Schemetrics of the ships?

I think I can help you out here.

For the Defiant, consult the "Deep Space Nine Technical Manual." You can find it online, or at a Barnes & Noble.

For the Enterprise D, consult the "Enterprise D Technical Manual." You should be able to find this at Barnes & Noble as well.

For the origonal Enterprise, there is a technical manual that came out several years ago, but you'de probably have to find it on E-Bay.

Other than these three examples, the best source of blueprints is the official "Star Trek" Magazine available anywhere magazines are sold. If you don't own any of these as of now, I'd suggest ordering some of the old back issues from 1999 and 2000, there are a lot of starship blueprints in those issues.
