Would you have liked to see Kes and Neelix get married? Seven get
re-assimilated? Or Chakotay to betray the captain?

I would have liked to see Neelix and Kes get married and have kids. I would also like to Seven get re-assimilated or Chakotay start a riot and betray the captain. Or possibly Voyager taken over by species 8472, and then they have to make an alliance with the borg to re-take the ship.
