So captain proton is a blackandwhite program, with presumably bnw costumes,. That doesnt explain bnw faces, or Starfleet uniforms like when Torres comes in once. They got it right with holodoc's appearance in Night, but other than that...

Photons and Forcefields - presumably, the Holodeck is capable of emitting a spectrum of light where your retinas would only be able to discern various shades of grey...

...or it was just a clever TV idea/gimmick to have a holodeck program based in on 1920's-30's program be done in B/W, maybe?

We've seen the holodeck used to add era-specific clothing to people. I think it's not unreasonable to assume that they could add a "shade of gray" (hahahaha) to people to make them appear black and white. Of course, anyone just entering would still need to be "transformed" to b&w, which is why when the Doctor entered that one time, Tom instructed the computer to allign his program with the holodeck parameters (or something like that).

It s possible- but then why the fullcolour holodoc? Anyway, the hd doesnt add clothing- they replicat it beforehand- otherwise if the program went off youd be left inthe nod!

Because the doc is holographic, the holodeck won't change the perameters of his program automatically. And the holodeck can add clothing, presuming you're wearing a leotard or something underneath I think they'd be fine. Especially if they didn't have enough replicator rations or something

Yes, in most cases the people go into the holodeck with their costumes on. But in other cases, the holodeck can also add clothing. Seven of Nine did this in "Human Error." And she wasn't wearing a leotard, either. She was wearing her clothing. Her normal clothing. The only thing that changed on her was her hair that she put back up in her bun as she left.

I can't imagine how anyone can go on that holodeck without eventually becoming disorientated and then damaged. There is no mention of what that holodeck might do to you. Inborn ability?
