for example if the enterprise-e was to go up to ds9 and wanna fight to the death do you think ds9 could win? of if the ship was voyager or the defiant.....

I'd say that DS9 could stand up to pretty much any ship, if that ship were on its own...perhaps an exception would be a Borg vessel, like a Tactical Cube or something...
Also I suppose it depends on how determined that one ship is...say that ship was heavily damaged and made a kamakaze run on the reactor and managed to get past the shields...

It would not be very hard for the E-E to fire a volley of Q torps at one side of the station to collapse the shields in that area, and then the station is pretty much finished.

But DS9 has 360 degree phaser & photon torpedo arcs...so evasive manuevers aren't really an option...you might evade some shots but not all...
Wouldn't the Dominion have had some analogue for the quantum torpedo and if so, could have used those against DS9...if they had such a weapon it would make sense to use them when they took control of the station...either they didn't or that type of torpedo didn't have any great impact...
...and if DS9 had all its support craft such as the Defiant and Runabouts that would complicate things...but you didn't mention that in the topic-starter so I'll ignore those...
I've just noticed how often I end sentences with "..."...it's beginning to annoy me
