No, he never said "Beam me up, Scotty." That was just a phrase that somehow came into being.

The phrase "beam me up scotty" was never used in the original series. Not once. In the short-lived animated series the prase "beam us up scotty" was used a few times though.

Well, in Star Wars, Darth Vader never actually said "Luke, I am your father. It's true." I guess it's like that.

actualy in starwars episode 5 at the end where luke just lost his hand and darth vader asked him if he knew who his father was, then he said "luke im your father" so i guess startrek is one of a kind

Actually, he said "No. I am your father." But somehow "Luke, I am your father. It's true." came to be.

You're all right, the phrase "Beam me up, Scotty" was never used.
Similar phrases: "Scotty, beam me up." "Stand by to beam us up, Scotty", etc, but never that one.

If I'm not mistaken, "Beam me up, Scotty" was a popular bumper sticker for a LONG time. That's where the phrase originated from. It was never used in actual dialogue on TOS though several varients did come into play.
