Because their genetic profile is 100 times more complex than everyone elses, I think it's just their too advanced for the borg.

THe Borg will NEVER adapt to spesis 8472 , and NEVER assimilate them. Spesis 8472 has a highly advanced immune system, which rejects and destroys and biological or technolicigal things not adpted for them, which renders Spesis 8742 viturally invincible to the Borg. They also have a very dense structure, making them almost impervious to almost all enegry, including phasers and transporters.
